A heavy crop across most vineyards coincided with warm fall weather, causing rapid sugar increase in the grapes. Our 2023 Chardonnay was a vintage of experimentation. Machine-picked, the grapes were divided into three distinct styles: unbaked, hyper-oxidized, and traditional barrel fermentation. The Unoaked Chardonnay ids crisp, clean, and refreshingly light. A style I truly enjoy. The "unstable" part reflects a minimal intervention approach to fining and cold stabilization. This means you might encounter some haziness or tartrate crystals in the bottle over time. These are harmless and simply a conversation starter about this particular wine making process.

This Syrah was hand-picked, the grapes were placed whole (without destemming or crushing) into a 300-gallon tank. Sealed shut, the tank was then purged with CO2 and left undisturbed for one month. Carbonoic maceration is a winemaking technique where whole grapes ferment from the inside out in a carbon dioxide-rich environment. This method promotes softer tannins and results in a fruit-forward wine meant for early enjoyment.
