On the nose you will pick up scents of baking spices and dark fruits.

Palate

After aging in French oak for 22 months the primary flavors of this full-bodied wine are cassis, blackberry, anise, and tobacco. The plush, elegant tannins balanced with the dark fruit flavors are indicative of a fine wine meant for aging for years to come.

Growing Conditions

Rock Spur Vineyards

I have been blessed with a site that has terrible soil; only a little bit of topsoil with rocks leftover from the Bonneville flood. The structure of the soil beneath the topsoil, is black lava gravel from the volcanic vent at the south end of the vineyard. I know this all sounds awful, but it has allowed me to produce a cabernet sauvignon that imparts a special kind of minerality and flavor intensity that I don’t think you can find anywhere else.

Winemaking

The combination of the soil and heat intensity of our site contributes to being able to produce a cabernet sauvignon that has small clusters and small berries.
