Nose

Black olive, sage, and dried leaves on a forest floor greet you, with notes of cherry cordial and bell pepper.

Palate

Worn leather, and a fine cognac on the finish.

Growing Conditions

The 2020 vintage was relatively normal, with moderate yet consistent temperatures and only a few days of extreme heat exceeding 100°F. Excessive ground moisture prolonged the need to irrigate until mid-summer. September wildfire smoke delayed ripening and harvest a bit, but a long, frost-free fall brought everything to ripeness.

Harvest

Mid-late October.

Bottling

Bottled August 19th, 2022.

Aging

French Oak

Food Pairing

This Cabernet Sauvignon will handle whatever you choose to pair it with.
Bolognese, portabella mushroom, a cut of Wagyu beef…we recommend letting it breathe for a bit before enjoying.
